Oatmeal Cookies

I REALLY don’t like raisins. As a result, I did not have a delicious oatmeal cookie until I took matters into my own hands.
Generally, I make these with chocolate chips, but I had some Mini M+M’s on hand. Really, any mix in would work. The recipe is provided below.
Oatmeal Cookies

Makes approximately 1 1/2 dozen cookies.
Ingredients
- 1/2 cup butter, softened
- 1/2 cup packed light brown sugar
- 1/4 cup white sugar
- 1 egg
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 3/4 cup and 2 tbs. all-purpose flour
- 1/4 teaspoon baking soda
- 1/4 tsp. salt
- 1 1/2 heaping cups quick-cooking oats
- 1/2 cup mix-ins (i.e. Mini M+M’s or chocolate chips)
Preheat oven to 325 degrees F.
In a large bowl, cream together the butter, light brown sugar, and white sugar until smooth. Beat in egg, then stir in vanilla and almond extracts.

Combine the flour, baking soda, and salt in a separate bowl. Stir the two mixtures together until just blended. Add the quick oats and the mix-ins, and mix together.

Drop by heaping spoonfuls onto un-greased baking sheets.

Bake for 12 minutes in the preheated oven. Allow cookies to cool on baking sheet.
