Peanut Butter Oatmeal Chocolate Chip Cookies

I made these cookies for my sister!
Honestly, when I make oatmeal cookies, I usually like for them to be… OATMEAL COOKIES. These include oatmeal, but I’d consider them to be a little more like peanut butter, chocolate chip cookies. Still delicious, but just know what you’re getting into before you make them.
Peanut Butter Oatmeal Chocolate Chip Cookies

Makes approximately 1 1/2 dozen cookies.
Ingredients
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1/2 cup creamy peanut butter
- 1/2 cup sugar
- 1/3 cup brown sugar
- 1/2 teaspoon vanilla extract
- 1 egg
- 1/2 cup rolled oats
- 1/4 cup mini semi-sweet chocolate chips
Preheat oven to 350 deg F.
Whisk together the flour, baking soda, and salt.

Cream together the butter, peanut butter, sugar, brown sugar, and vanilla extract.

Add the egg, and beat to combine. Stir in the flour mixture on low speed. Add in the oats and the chocolate chips.
Roll the dough into balls (~2 inches in diameter), and place onto baking sheets lined with parchment paper.

Bake for 10 minutes.

The cookies will set completely upon cooling.
